°8 medium-sized potatoes, in the peel
°1 teaspoon (5 ml) salt
°pinch of mustard powder
°Lemon juice and black pepper to taste
°½ cup (125 ml) mayonnaise
°1/2 cup (125 ml) low-fat yogurt
°1 tablespoon (15 ml) fresh chopped parsley
°1/2 red or green bell pepper, seeded and chopped
°1/2 onion, chopped (see tip)
°1 hard boiled egg, peeled and chopped (optional)
Put the potatoes and ½ teaspoon of salt in a saucepan of water. Bring the mixture to a boil and cook until soft. Leave to cool, peel and cut into cubes.
Mix the mustard, remaining salt, lemon juice, pepper, mayonnaise, yogurt, and parsley.
Mix the sauce with potatoes with red pepper and onions.
Sprinkle with eggs and serve as a side dish.
To soften the strong flavor of raw onions, cover with boiling water and leave for a few minutes. Strain well and use as above.
If fresh chives are available, add 2 tablespoons of chopped chives to the sauce.
