250 grams Spaghetti
1/4 cup Light Olive Oil
2 tablespoons Garlic chopped finely
250 grams Spanish Chorizo cut into small dice
6 pieces Plum Tomatoes de-seeded and cut into strips
100 grams Fresh Basil Leaves chopped coarsely
Salt & Pepper to taste
Cook the pasta according to package instructions. Drain, toss in olive oil and set aside.
Using a frying pan, heat the light olive oil over medium heat.
Sauté the garlic for 1 minute.
Add the chorizo and fry for 3 minutes.
Put in the tomatoes and cook until they are softened.
Add the cooked pasta.
Season it with salt and pepper.
Add the fresh basil leaves and mix until the pasta is well coated with the sauce.
Divide into 4 serving plates.
Serve while hot.
