°230g almond flour (finer
°115 g heavy cream
°3 eggs
°120 g of erythritol
°1 teaspoon of baking powder
°1 teaspoon liquid vanilla
+For the butter syrup
°50g butter
°60 g of erythritol
°1 teaspoon liquid vanilla
°2 tablespoons of water
+For the frosting (optional)
°3 full teaspoons of erythritol ice
°1 teaspoon fresh squeezed lemon juice
Directions:
Step 1
First of all, pour the almond flour (finer than the powder), the erythritol and the teaspoon of baking powder into a mixing bowl or a salad bowl. Mix the dry ingredients well together.

Pour the fresh cream and the whole eggs… Also preheat the oven to th. 6 (180°C).

as well as liquid vanilla extract.

Then mix well with a spatula. The dough is quite dense, that’s normal.

Pour the batter into a well-greased pan and spread the batter evenly.

Also to smooth the dough (which otherwise sticks) I used my moistened hand. I moistened it several times. Bake for 30-35 minutes.

In the last minutes of cooking put all the ingredients to make the syrup in a saucepan. Place over low heat and stir until sweetener is melted.

Finally, take the Kentucky cake out of the oven and poke holes in it. Here I did it with a Chinese chopstick.

Pour the syrup over the cake. Leave to cool completely before inverting onto a serving platter.

To finish I dissolved 3 teaspoons of erythritol powder in ice cream with a few drops of lemon to make this icing. But you can do the decoration you want or not at all! I was hoping to take some pretty pictures…

Here is the texture of the sliced cake. It’s fragrant, tender, moist and absolutely addictive!
