Ingredients :
– 1 whole chicken
– 125g butter
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon cumin
– 1 tablespoon chicken spice
– 4 tablespoons finely chopped mixed herbs
– 1 medium onion, halved
Directions :
– Preheat oven to 180c and pat chicken dry
– in a small bowl, combine butter, spices and herbs and mix well
– Rub the chicken generously with the butter mixture including inside the cavity and under the skin.
– Stuff the cavity with the onion
– Place chicken on a baking tray and roast till golden and cooked through 1 hr 15mins. Turn once or twice and baste during cooking
