2 tbsp oil

1 large onion, chopped

1 red pepper, chopped

1 jalapeno, chopped

1 tsp cumin powder

1 tbsp cayenne pepper

2 cups Spekko India Gate Basmati Rice

2 cups vegetable/chicken stock

1 can kidney beans, drained and rinsed

1 cup frozen sweetcorn




In a pan heat oil, sauté onion, pepper, jalapeno, add cumin and cayenne pepper. Add rice, pour in stock. Lower the heat. Cover and allow to simmer until rice is cooked though or for 12-15 minutes. Add in beans and sweetcorn, mix well.
