– 1 cup pineapple juice
– 1/2 cup soy sauce
– 1/4 cup brown sugar
– 3 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 2 tablespoons vegetable oil
– Salt and pepper to taste
– Cooked rice, for serving
– Chopped green onions and sesame seeds, for garnish

Instructions

1. In a bowl, combine the pineapple juice, soy sauce, brown sugar, minced garlic, and grated ginger to create the marinade. Stir until the sugar is dissolved.

2. Place the chicken pieces in a resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, reserving the other half for later. Seal the bag or cover the dish, and marinate the chicken in the refrigerator for at least 30 minutes, or preferably overnight for maximum flavor.
