– 4 boneless, skinless chicken breasts
– 2 bell peppers (red, yellow, or green), thinly sliced
– 1 onion, thinly sliced
– 2 cloves garlic, minced
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– Olive oil for cooking


1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.

2. Season the chicken breasts with salt, pepper, dried oregano, and dried basil on both sides.

3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

4. Add the sliced onions and peppers to the skillet and cook until they are soft and slightly caramelized, about 5-7 minutes. Season with salt and pepper to taste.

5. Remove the peppers and onions from the skillet and set aside.

6. In the same skillet, add a bit more olive oil if needed and sear the seasoned chicken breasts for about 2-3 minutes on each side until they are golden brown.

7. Transfer the seared chicken breasts to the greased baking dish.

8. Top each chicken breast with the sautéed peppers and onions, distributing them evenly.

9. Sprinkle shredded mozzarella cheese over the peppers and onions, followed by grated Parmesan cheese.

10. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

11. Once done, remove the foil and broil for an additional 2-3 minutes until the cheese is golden brown and bubbly.

12. Carefully remove from the oven and let it rest for a few minutes before serving.

13. Garnish with fresh basil or parsley if desired, and serve hot with your favorite side dishes like rice, pasta, or crusty bread.
