Soul-Satisfying Beef Stew

– 1.5 lbs beef chuck, cut into bite-sized pieces
– 2 tablespoons all-purpose flour
– Salt and pepper, to taste
– 2 tablespoons olive oil
– 1 large onion, chopped
– 3 cloves garlic, minced
– 4 carrots, peeled and sliced
– 4 celery stalks, sliced
– 3 potatoes, peeled and cubed
– 4 cups beef broth
– 1 cup red wine (optional)
– 2 bay leaves
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 cup frozen peas
– Chopped fresh parsley, for garnish


1. In a bowl, season the beef with salt, pepper, and flour, tossing to coat evenly.

2. In a Dutch oven or large pot, heat the olive oil over medium heat. Add the beef in batches, browning on all sides. Remove and set aside.

3. In the same pot, add the onion and garlic, sautéing until fragrant and translucent.

4. Add the carrots, celery, and potatoes, stirring occasionally until slightly softened.

5. Return the beef to the pot. Pour in the beef broth and red wine (if using). Stir in the bay leaves, thyme, and rosemary.

6. Bring the stew to a gentle boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are soft.

7. In the final 10 minutes of cooking, add the frozen peas, allowing them to heat through.

8. Once done, taste and adjust seasoning as needed. Garnish with fresh parsley before serving.
