Cajun Shrimp Deviled Eggs

– 6 large eggs
– 12 medium shrimp, peeled and deveined
– 1 tablespoon Cajun seasoning
– 1/4 cup mayonnaise
– 1 teaspoon Dijon mustard
– 1 teaspoon lemon juice
– Salt and pepper to taste
– Chopped fresh chives or green onions, for garnish
– Smoked paprika, for garnish


1. Hard-boil the eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let the eggs simmer for 10 minutes.

2. After 10 minutes, remove the eggs from the heat and transfer them to a bowl of ice water to cool for a few minutes.

3. Peel the eggs carefully and slice them in half lengthwise. Remove the yolks and place them in a separate bowl.

4. Cook the shrimp: In a small bowl, toss the peeled and deveined shrimp with Cajun seasoning until evenly coated.

5. Heat a skillet over medium-high heat and add a bit of oil. Cook the shrimp for 2-3 minutes on each side until pink and cooked through. Remove from heat and set aside to cool.

6. Prepare the filling: Mash the egg yolks with a fork until smooth. Add mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until well combined and creamy.

7. Chop the cooked shrimp into small pieces and fold them into the egg yolk mixture, reserving a few shrimp for garnish.

8. Spoon or pipe the egg yolk mixture into the hollowed-out egg whites.

9. Garnish each deviled egg with a piece of shrimp, chopped chives or green onions, and a sprinkle of smoked paprika for color and flavor.

10. Refrigerate the Cajun Shrimp Deviled Eggs for at least 30 minutes before serving to allow the flavors to meld together.
